First off, having a full floor 100% of the time, all night long is utopia. Not only that, it’s a place you don’t really wanna be. Give the audience a breather from time to time (by switching it up for example, which usually gets other people dancing). Also it gives the crowd a chance to get a/another drink. Which will put the venue owner in a good mood.
Don’t worry about fluctuating numbers of people on the floor.
As far as what to play next, main tip I would give is, keeping going up in BPM. When you get to max, do something drastically different to shake the place up some. I usually don’t go down slowy in BPM, but go from full speed and then for example throw in a half-time track. If it’s approximately half the speed of the previous track you can often get away with that and presto! you are at the beginning of a second building block.
