I’d do some of the prep work during cocktail hour, keep them hip swaying and toe tapping with low(er) bpm tracks with a high “Oh! I remember that one!”- factor.
Tone it done during dinner. Might even go back in time (depends on the crowd a bit, but some crooners could do well too). Keep it light, it helps the digestion.
Then after dinner slowly start rev’ing up the bpm. Again, depends strongly on the crowd what will get them going. The good news is, during cocktail hour, if you were paying attention to what tracks got what kind of response, you should have some clues already.
Other than that, just make sure that they can tell you are enjoying what you are doing and that you are there to entertain THEM.
