I cannot advise on the speakers as this depends largely on the design of the bar and you should check if multiple speakers are better suited etc.
I would get a small controll mixer (non DJ) to hook up to the PA. It can be a 100 bucks Peavey or small Mackie, just in case someone needs phantom etc. or you ever have a small band gig.

For mid range mixer the Pioneer DJM-850 is a top notch choice.
Of course CDJ 1000s are good and work nicely with the DJM-850.
As nice as they look I would not go for motorized platters, as some DJs that learned only on CDJs are afraid of them (no joke…), so the Denon 2900s are a really good alternative and a lot of bang for the buck.

I’d go with Terry on the speakers it really depends on the venue and how they can be postioned. Floor standing, wall brackets or hanging from the ceiling. I have a Behringer PA system, now eventhough some people down rate Behringer I’ve never had a problem with my equipment and it’s good enough for small to medium venues. One thing I love is the EQ as it’s self adjusting, I get to a venue plug the mic in to the EQ and let it do it’s work. I have a mixing board which to be honest I used alot at first but now it’s in storage. Crossovers, Limiters (stops over enthuiastic DJ’s blowing the system) Compressors, Expanders the list of components can be mind numbing.
You also need to look at the booth size. I’ve been to clubs where there was just enough room for 2 CDJ’s and a mixer. It’s worth bearing in mind unless the manager is going to build one to fit the equipment or just use some tables. The last club I played at had an old dresser on the first floor landing which they used as the DJ booth, right next to the ladies room.
If you can get the room size and layout some good PA centres can advise you on the best speakers, amps and processors. For a bar I’d be looking at a budget of around £10,000, if not more, and work down.

My actual set for my mobile work is 2 x CDJ900’s, DJM700 and an RMX1000. 2 X Behringer EP4000’s (Those beast are heavey) which I might change for the i Nuke 6000DSP (Light as a feather). Behringer CX2300 crossover. Behringer UB2442FX mixer, Behringer ULTRACURVE PRO DEQ2496 and a Behringer ULTRABASS PRO EX1200. I have various speakers which are used depending on the venue and music. I have 10 different set of speakers ranging from Turbosound subs (which you don’t need) to some cheap and cheerful KAM 15″s (which you won’t want) total cost of my set was close to £8000, not including any lighting you may want
I was considering a DJM850 or 900 but went with the 700 and RMX for the FX. With hindsight there would have been small advantages getting the DJM900 but I had a set budget. I’d definetly get a DJ mixer with a booth out and speakers for the booth. The CDJ’s give DJ’s the option of using multi formats or DVS without the need for a sound card unless they’re using Serato. There are cheaper multi format options though so don’t be fooled by the “Industry Standard” hype label. There can be Pros and Cons to every bit of hardware and software on the market.

Thank you all for the great feedback

In regards with the mixers, what about Allen and Heath range?

A great mixer, better than DJM700 but if I remember right there’s no send/return on it so bear that in mind if your thinking about FX units.

Si BooGie is right. However if it comes down to purist mixing and quality there is not many things that can beat A&H. I loved those mixers before I went digital and highly preferred them over Pioneers.
