The CDJ 800 is fairly old now so there’s a possibility it could be pretty beat up but they do have a decent life span. the question you should be asking is do you want to stick to vinyl or CDJs or do both?

Why not learn beatmatching with the VCI 300? It is perfect for manual beatmatching… just don’t look at the screen.
I think Phil is working with a 300 all the time and he is manual beatmatching all his stuff.

Hmm I have never encountered where Serato would “slip” into anything I did not tell it too… it surely does not engage sync on its own.
I do not have a 300, but you should be able to get the sensitivity of the pitch faders adjusted in the software options or similar (I cannot remember in Itch and no longer have an Itch controller…)

You can adjust by 1/50th of a BPM, prob finer, with a VCI-300. And if you set Serato to “simple sync”, it won’t do anything when you hit “sync” apart from one.time line up the beat and the tempo. Then it’s over to you (ie manual beatmatching). I use them purely as manual decks, and I love the set-up.
